  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 4 slices crispy bacon, diced
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the sweet potatoes, then slice them into 1/4-inch rounds.
  3. Arrange the rounds in a single layer on the prepared baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper.
