- 4 slices crispy bacon, diced
- 1/2 cup sour cream

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the sweet potatoes, then slice them into 1/4-inch rounds.
- Arrange the rounds in a single layer on the prepared baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper.
- Bake for 20 minutes, flip the rounds, and bake for another 10-15 minutes until golden and slightly crispy.
- Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over each round. Top with bacon crumbles.
- Return the rounds to the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Let the rounds cool for 2-3 minutes. Add a dollop of sour cream to each one and sprinkle with green onions.
Notes
