- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons lemon zest

- 1/2 teaspoon salt
- 1 tablespoon finely chopped culinary lavender
- 1 cup (120g) powdered sugar
- 2 tablespoons lemon juice (for glaze)
Instructions
- Cream 1 cup (226g) of softened butter and 3/4 cup (150g) granulated sugar together until light and fluffy.
- Add 1 large egg, 1 teaspoon of vanilla extract, 2 teaspoons of lemon zest, and 1 tablespoon of fresh lemon juice. Mix until combined.
- In a separate bowl, whisk together 2 1/4 cups (280g) of all-purpose flour, 1/2 teaspoon of salt, and 1 tablespoon of finely chopped culinary lavender.
- Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
- Divide the dough into two discs, wrap them in plastic wrap, and chill for at least 1 hour.
- Preheat your oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/4-inch thickness.
- Use a cookie cutter to cut out shapes, then transfer them to a parchment-lined baking sheet.
- Bake the cookies for 10-12 minutes, or until the edges are just starting to turn golden.
- Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Mix 1 cup (120g) of powdered sugar with 2 tablespoons of lemon juice until smooth to make the glaze.
- Drizzle the glaze over the cooled cookies.
Notes
Chilling the dough is crucial to prevent spreading. Use fresh lavender and lemon for the best flavor. Taste the lavender before using to ensure it’s not too potent.
