  • 3 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush 2 cups of graham crackers into fine crumbs. Mix with 1/2 cup melted butter and 1/4 cup granulated sugar until combined.
  3. Press the mixture evenly into a greased or parchment-lined 9×13-inch baking pan. Bake for 8-10 minutes, then let cool.
  4. In a large bowl, beat 16 ounces softened cream cheese with 1 cup granulated sugar until smooth.
  5. Add 2 large eggs and 1 teaspoon vanilla extract, mixing until fully incorporated. Pour the filling over the cooled crust and spread evenly.
  6. In a saucepan, combine 3 cups fresh blueberries, 1/4 cup sugar, 2 tablespoons lemon juice, and 1 tablespoon cornstarch.
  7. Cook over medium heat, stirring often, until the mixture thickens and the berries soften (about 5-7 minutes). Let cool slightly.
  8. Spoon the blueberry topping over the cream cheese filling, spreading it gently to cover the surface.
  9. Bake for 30-35 minutes, or until the filling is set but still slightly jiggly in the center.
