  • Author: Sarah
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

Tender, smoky BBQ chicken paired with roasted sweet potatoes, crunchy veggies, and a drizzle of tangy ranch or creamy avocado dressing. Perfect for weeknight dinners or meal prep, this customizable recipe is packed with bold flavors and wholesome ingredients.

Ingredients

Scale
  • 1 pound (450g) boneless, skinless chicken breasts
  • BBQ sauce (low-sugar or homemade preferred)
  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Mixed greens (spinach, kale, or arugula)
  • Corn, cherry tomatoes, red onion, or pickled jalapeños (optional toppings)
  • Ranch dressing, avocado crema, or lemon-tahini drizzle (optional dressing)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and dice 2 large sweet potatoes into bite-sized cubes. Toss them with olive oil, garlic powder, paprika, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes, flipping halfway through, until golden and tender.
  4. Season the chicken breasts with salt, pepper, and a light brush of BBQ sauce. Let sit for 10 minutes.
  5. Heat a grill or grill pan over medium-high heat. Cook the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Brush on more BBQ sauce in the last few minutes of cooking.
  6. Divide the mixed greens among bowls. Top with roasted sweet potatoes, sliced BBQ chicken, and your choice of veggies.
  7. Drizzle with your favorite dressing and sprinkle on any extra toppings like cilantro or green onions.
  8. Let the chicken rest for 5 minutes before slicing to lock in the juices.

Notes

To make ahead, roast the sweet potatoes and grill the chicken in advance. Store components separately and assemble bowls just before serving. For a vegetarian option, swap chicken for grilled tofu or roasted chickpeas.
