  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup Panko breadcrumbs

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
  2. Wash the zucchini, trim off the ends, and slice them into sticks about 3-4 inches long and 1/2 inch thick.
  3. In one bowl, whisk 2 eggs until frothy. In another bowl, combine 1/2 cup grated Parmesan, 1 cup Panko breadcrumbs, 1 teaspoon garlic powder, 1/2 teaspoon paprika, and a pinch of salt and pepper.
  4. Dip each zucchini stick into the egg mixture, allowing excess to drip off, then roll it in the Parmesan breadcrumb mixture. Press gently to ensure the coating sticks.
  5. Place the coated zucchini sticks on the prepared baking sheet, ensuring they’re not touching.
  6. Spray the tops lightly with cooking spray and bake for 20-25 minutes, flipping halfway through. The fries should be golden and crispy.
