Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
- Wash the zucchini, trim off the ends, and slice them into sticks about 3-4 inches long and 1/2 inch thick.
- In one bowl, whisk 2 eggs until frothy. In another bowl, combine 1/2 cup grated Parmesan, 1 cup Panko breadcrumbs, 1 teaspoon garlic powder, 1/2 teaspoon paprika, and a pinch of salt and pepper.
- Dip each zucchini stick into the egg mixture, allowing excess to drip off, then roll it in the Parmesan breadcrumb mixture. Press gently to ensure the coating sticks.
- Place the coated zucchini sticks on the prepared baking sheet, ensuring they’re not touching.
- Spray the tops lightly with cooking spray and bake for 20-25 minutes, flipping halfway through. The fries should be golden and crispy.
- Let the fries cool for a minute, then serve with your favorite dipping sauce.
Notes
For extra crispiness, broil the fries for 2-3 minutes at the end of baking. Pat zucchini sticks dry with paper towels before dredging to prevent sogginess.
