- 1½ cups (150g) crushed graham crackers
- 6 tablespoons (85g) melted butter
- 2 tablespoons (25g) sugar (for crust)
- 16 ounces (450g) cream cheese, softened
- ¾ cup (150g) granulated sugar
- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy cream
- 2–3 fresh peaches, sliced
- 1 cup (150g) mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon (15ml) fresh lemon juice
Instructions
- In a medium bowl, mix crushed graham crackers with melted butter and 2 tablespoons sugar. Press mixture firmly into the bottom of a 9-inch springform pan. Chill in refrigerator for 30 minutes.
- In a large bowl, beat softened cream cheese with ¾ cup sugar until smooth. Add vanilla extract and mix well.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until combined.
- Spoon filling onto chilled crust and smooth top with spatula. Cover and refrigerate for at least 4 hours or overnight.
- Slice fresh peaches and toss with lemon juice. Arrange peach slices on top of cheesecake.
- Scatter mixed berries over the peaches.
- Carefully remove cheesecake from springform pan. Slice and serve chilled.
Notes
Make sure cream cheese is fully softened for best texture. Pat fruit dry if using frozen berries to prevent excess moisture. For extra sweetness, drizzle honey over fruit topping before serving.
