- 2 cups fresh strawberries, washed and hulled
- 2 tablespoons sugar (for macerating strawberries)
- 1 cup heavy cream
- 1–2 tablespoons sugar (for whipped cream, to taste)
- 1 teaspoon vanilla extract
- Shortcake, sponge cake, or pound cake, cut into 1-inch cubes
- Optional: mascarpone cheese for whipped cream
- Optional: crushed shortbread cookies for garnish
Instructions
- Wash and hull 2 cups of fresh strawberries. Slice them into bite-sized pieces and toss with 2 tablespoons of sugar. Let sit for 10–15 minutes to macerate.
- In a mixing bowl, combine 1 cup of heavy cream and 1 teaspoon of vanilla extract. Whip until soft peaks form. Add 1–2 tablespoons of sugar (to taste) and continue whipping until stiff peaks form. Set aside.
- Cut your shortcake or sponge cake into 1-inch cubes.
- Start layering in mason jars: add a layer of cake cubes, followed by a spoonful of macerated strawberries, and a dollop of whipped cream. Repeat layers until the jar is full, finishing with whipped cream on top.
- Garnish with a fresh strawberry slice or crushed shortbread cookies. Serve chilled.
Notes
For a tangy twist, add mascarpone cheese to the whipped cream. Chill the jars for at least an hour before serving to allow the flavors to meld. Use a piping bag for neat whipped cream layers.
