- 1 cup (226g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons matcha powder
- 2 tablespoons strawberry powder (made from freeze-dried strawberries)
Instructions
- In a large bowl, cream 1 cup (226g) of unsalted butter and 1 cup (200g) of granulated sugar until light and fluffy. Add 1 egg and 1 teaspoon of vanilla extract, mixing until combined.
- In a separate bowl, whisk together 2 ½ cups (315g) of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Split the dough into two equal portions. To one portion, mix in 2 tablespoons of matcha powder. To the other, mix in 2 tablespoons of strawberry powder.
- Roll out each dough portion into a rectangle about ¼ inch thick. Layer the strawberry dough on top of the matcha dough, then roll them together tightly from one edge to form a log.
- Wrap the dough log in plastic wrap and refrigerate for at least 1 hour to firm up.
- Preheat your oven to 350°F (175°C). Slice the chilled dough log into ¼-inch rounds and place them on a lined baking sheet.
- Bake for 10-12 minutes, or until the edges are just starting to turn golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
