A tropical dessert masterpiece blending creamy coconut milk, fragrant sticky rice, ripe mango slices with a spicy kick, and crunchy toppings. Inspired by traditional Thai sticky rice desserts with a modern sundae twist.

- 2 ripe mangoes (Ataulfo or Honey Mango preferred)
- 1 cup (200g) Thai glutinous rice
- 1 cup (240ml) full-fat coconut milk
- 2 tablespoons (25g) sugar
- Pinch of salt
- Pinch of chili powder or cayenne (adjust to taste)
- Roasted peanuts, toasted sesame seeds, or shredded coconut (for toppings)
Instructions
- Rinse 1 cup (200g) of glutinous rice until the water runs clear, then soak it for at least 4 hours or overnight. Steam the rice for 25-30 minutes until tender.
- In a small saucepan, combine 1 cup (240ml) of full-fat coconut milk, 2 tablespoons (25g) of sugar, and a pinch of salt. Heat gently until the sugar dissolves, but don’t let it boil.
- Once the sticky rice is cooked, transfer it to a bowl and pour half of the coconut milk mixture over it. Stir gently and let it sit for 10 minutes to absorb the flavors.
- Peel and slice 2 ripe mangoes into thin pieces. Sprinkle a small amount of chili powder or cayenne over the mango slices for the spicy twist.
- In serving glasses or bowls, layer the sticky rice, mango slices, and a drizzle of the remaining coconut milk mixture.
- Sprinkle roasted peanuts, toasted sesame seeds, or shredded coconut on top for crunch. Serve immediately.
Notes
Soak the sticky rice for at least 4 hours to ensure even cooking. Adjust the spice level to your preference. Use clear glasses or bowls for a visually appealing presentation.
