- Firm orange-fleshed sweet potatoes, cut into chunks
- 1/3 cup honey
- 4 cloves garlic, minced

- 1 teaspoon sesame oil
- 1 tablespoon freshly grated ginger
- Optional: pinch of chili flakes or smoked paprika
Instructions
- Peel and chop the sweet potatoes into chunks. Mince the garlic and grate the ginger.
- In a mixing bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger.
- Place the sweet potato chunks at the bottom of the slow cooker. Arrange the chicken thighs on top in a single layer.
- Evenly drizzle the honey garlic sauce over the chicken and sweet potatoes.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and the sweet potatoes are fork-soft.
- Optional: Remove the chicken and sweet potatoes, and thicken the sauce in a saucepan with a cornstarch slurry for a glossy finish.
- Plate the chicken and sweet potatoes, spoon the sauce over the top, and garnish with chopped green onions or sesame seeds.
Notes
For extra flavor, sear the chicken thighs in a hot skillet before adding them to the slow cooker. Cut sweet potatoes into larger chunks to avoid mushiness. Taste the sauce before serving and adjust with soy sauce or rice vinegar as needed.
