  • Pineapple slices (fresh or canned in juice)

  • 1/2 cup (1 stick) unsalted butter, softened (for batter)
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup (120ml) whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a small saucepan, melt 1/2 cup of butter and stir in 1 cup of brown sugar until smooth. Pour this mixture into the prepared pan and spread it evenly. Arrange pineapple slices and cherries on top in a pattern of your choice.
  3. In a large bowl, cream 1/2 cup of softened butter and 1 cup of sugar until light and fluffy. Beat in 2 eggs, one at a time, followed by 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together 1 3/4 cups of flour and 2 teaspoons of baking powder. Gradually add this to the wet ingredients, alternating with 1/2 cup of milk, starting and ending with the dry ingredients.
  5. Carefully pour the batter over the pineapple topping, spreading it evenly. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for about 10 minutes. Then, place a serving tray or cutting board over the pan and carefully flip it over. Remove the pan and parchment paper to reveal the topping.
  7. Allow the bars to cool completely before slicing them into squares.

Notes

Use room temperature ingredients for a smoother batter. If the edges brown too quickly, cover the pan with foil during the last 10 minutes of baking. Allow the cake to cool slightly before flipping to avoid a sticky mess.
