- 1 cup (240g) peanut butter (creamy or chunky, avoid natural with oil separation)
- 1 cup (90g) old-fashioned oats
- 1 cup (125g) all-purpose flour
- 1/2 cup (1 stick, 113g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar until creamy. Add peanut butter, egg, and vanilla extract, and mix until smooth.
- In a separate bowl, whisk together all-purpose flour, baking soda, salt, and old-fashioned oats.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For extra chewy cookies, slightly underbake them and let them set as they cool. Add chocolate chips or a sprinkle of flaky sea salt for variations.
