- 2/3 cup (134 g) granulated sugar
- 2 large egg yolks
- 1 teaspoon (5 ml) vanilla extract
- 2 cups (240 g) all-purpose flour
- 1/4 teaspoon (1 g) salt
- Lemon curd (store-bought or homemade)
- Optional: Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until fluffy, about 2-3 minutes.
- Add the egg yolks and vanilla extract. Mix until combined.
- Gradually add the all-purpose flour and salt. Mix until a soft dough forms. Avoid overmixing.
- Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared cookie sheets, spaced about 2 inches (5 cm) apart.
- Using your thumb or the back of a teaspoon, press an indentation into the center of each ball. Be careful not to press too hard.
- Bake the cookies for 10-12 minutes, or until the edges are lightly golden. The centers may puff slightly.
- Remove the cookies from the oven and gently press the indentations again while they’re still warm. Let them cool completely on a wire rack.
- Spoon a small amount of lemon curd into each indentation, smoothing it out with the back of a spoon.
- Optional: Dust the cookies with powdered sugar for a pretty finish.
Notes
For a softer cookie, chill the dough for 15-20 minutes before rolling it into balls. Re-press the indentations after baking to ensure enough space for the lemon curd. Use a piping bag for neat fillings if desired.
