- 1 cup (125 g) all-purpose flour
- 1 cup (90 g) old-fashioned rolled oats
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (110 g) brown sugar
- 1/2 cup (113 g) cold unsalted butter, diced
- 1/2 cup (120 ml) fresh lemon juice
- 1 tablespoon lemon zest
- 1 can (14 oz/396 g) sweetened condensed milk
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9 baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, combine flour, rolled oats, granulated sugar, brown sugar, and a pinch of salt.
- Add the cold, diced butter and use a pastry cutter to mix until the mixture resembles coarse crumbs.
- Take two-thirds of the mixture and press it firmly into the bottom of the prepared pan. Bake for 10 minutes.
- In a medium bowl, whisk together fresh lemon juice, lemon zest, and sweetened condensed milk until smooth.
- Pour the lemon mixture over the baked crust, spreading evenly. Sprinkle the remaining crumble mixture on top.
- Return the pan to the oven and bake for 20-25 minutes, or until the top is lightly golden.
- Let the bars cool in the pan, then refrigerate for at least 2 hours before slicing.
Notes
For clean slices, chill the bars thoroughly and use a sharp knife, wiping the blade between cuts. Don’t skip the lemon zest for maximum flavor.
