- 1/4 cup (50g) granulated sugar
- 1 teaspoon baking powder
- Pinch of salt
- 6 tablespoons (85g) chilled unsalted butter
- 1/3 cup (80ml) milk
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish lightly with butter or non-stick spray.
- In a large bowl, toss the sliced nectarines with granulated sugar, lemon juice, cornstarch, and dried lavender. Set aside.
- In a medium bowl, whisk together the flour, granulated sugar, baking powder, and a pinch of salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
- Spread the nectarine filling evenly in the prepared baking dish. Drop spoonfuls of the topping over the fruit, leaving some gaps for steam to escape.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
- Let the cobbler rest for 10 minutes before serving to allow the filling to thicken.
