Nectarine Cobbler Recipe Easy Rustic Dessert with Lavender

  • Author: Sarah
  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Description

This nectarine cobbler recipe combines juicy nectarines with the subtle floral aroma of lavender, topped with a buttery biscuit-like crust. It’s a rustic yet elegant dessert that’s easy to make and perfect for any occasion.

Ingredients

Scale
  • 6 medium nectarines (about 4 cups), sliced into wedges
  • 1/3 cup (70g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) cornstarch
  • 1 teaspoon dried lavender
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • 6 tablespoons (85g) chilled unsalted butter
  • 1/3 cup (80ml) milk

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, toss the sliced nectarines with granulated sugar, lemon juice, cornstarch, and dried lavender. Set aside.
  3. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and a pinch of salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  4. Spread the nectarine filling evenly in the prepared baking dish. Drop spoonfuls of the topping over the fruit, leaving some gaps for steam to escape.
  5. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
  6. Let the cobbler rest for 10 minutes before serving to allow the filling to thicken.

Notes

Use cold butter for a flaky topping, and taste the nectarines before adding sugar to adjust sweetness. Avoid using too much lavender to prevent an overpowering flavor.
