  • 4 tablespoons (60g) unsalted butter, melted
  • 16 ounces (450g) full-fat cream cheese, room temperature
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1 cup (150g) fresh or thawed blueberries
  • 2 tablespoons (25g) sugar
  • 1 teaspoon cornstarch

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.
  2. Crush graham crackers into fine crumbs using a food processor. Mix with melted butter until evenly coated. Press about a tablespoon of the mixture into each muffin liner and compact it.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar, lemon juice, lemon zest, and vanilla extract. Beat in eggs, one at a time, until fully incorporated.
  4. Divide the filling evenly among the prepared crusts, filling about 3/4 of the way up.
  5. Bake for 18-20 minutes, or until the centers are slightly jiggly but the edges are set. Cool in the pan for 30 minutes, then refrigerate for at least 2 hours.
  6. In a small saucepan, combine blueberries, sugar, and cornstarch. Cook over medium heat, stirring frequently, until thickened. Let cool completely.
  7. Spoon the blueberry topping over each cheesecake before serving. Garnish with extra lemon zest if desired.
