- 1 cup (240ml) coconut milk
- 1.5 ounces (45ml) rum or vodka
- 1 tablespoon (15ml) lime juice
- 1–2 tablespoons (15-30ml) simple syrup
- Ice
- Optional garnishes: shredded coconut, edible flowers, or a lime wedge
Instructions
- Prepare the ube puree: If using fresh ube, peel and boil the purple yam until tender. Blend it with a splash of water until it reaches a smooth consistency. If using store-bought ube puree, give it a quick stir to ensure it’s evenly mixed.
- Mix the base: In a blender, combine 2 tablespoons (30g) of ube puree, 1 cup (240ml) of coconut milk, 1.5 ounces (45ml) of rum or vodka, 1 tablespoon (15ml) of lime juice, and 1-2 tablespoons (15-30ml) of simple syrup. Blend until smooth.
- Chill and shake: Fill a cocktail shaker halfway with ice and pour in the blended mixture. Shake vigorously for 15-20 seconds.
- Strain and pour: Strain the mixture into a highball glass filled with fresh ice.
- Garnish: Add a sprinkle of shredded coconut, a lime wedge, or an edible flower on top for a picture-perfect finish.
Notes
For a mocktail version, replace the alcohol with sparkling water or ginger beer. Adjust the sweetness of the cocktail based on the natural sweetness of the ube puree. Fresh lime juice is recommended for the best flavor.
