  • Author: Sarah
  • Total Time: 2 hours 20 minutes
  • Yield: 8 servings 1x

Description

This vibrant and indulgent Aperol Spritz Trifle combines the flavors of the classic cocktail with the elegance of a layered dessert, making it perfect for parties and gatherings.

Ingredients

Scale
  • 1/2 cup Aperol
  • 1/2 cup prosecco
  • 1/4 cup orange juice
  • 1 light vanilla sponge cake (store-bought or homemade)
  • 1/4 cup sugar
  • 1 teaspoon orange zest
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup fresh strawberries
  • 1 cup fresh raspberries
  • Additional orange zest for garnish
  • Fresh mint for garnish

Instructions

  1. Make the Sponge Cake: If baking your own sponge cake, prepare it according to your recipe and let it cool completely. Otherwise, slice your store-bought sponge cake into thin layers.
  2. Create the Aperol Mixture: In a bowl, combine 1/2 cup Aperol, 1/2 cup prosecco, and 1/4 cup orange juice. This will be your soaking liquid for the cake layers.
  3. Prepare the Mascarpone Layer: In a mixing bowl, whisk together mascarpone cheese, 1/4 cup sugar, and 1 teaspoon orange zest until smooth.
  4. Whip the Cream: In another bowl, whip 1 cup heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
  5. Layer the Trifle: Start with a layer of sponge cake at the bottom of your trifle dish. Brush generously with the Aperol mixture. Add a layer of mascarpone cream, followed by fresh berries. Repeat until the dish is full, ending with a mascarpone layer.
  6. Chill: Cover the trifle with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld.
  7. Garnish: Just before serving, top with fresh berries, orange zest, and a sprig of mint for a pop of color.

Notes

Use chilled prosecco and Aperol for the soaking liquid to keep the dessert refreshing. Avoid over-soaking the sponge cake to prevent sogginess. For perfect whipped cream, chill your mixing bowl and whisk beforehand.
