Description

These Heavenly Summer Peach Bars are a delightful dessert with a buttery shortbread crust, luscious peach filling, and crumbly topping. Perfect for summer gatherings or a weeknight treat.

  • 68 fresh peaches (about 4 cups/600g), peeled and sliced
  • 2 cups (250g) all-purpose flour
  • 1 cup (125g) all-purpose flour (for topping)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (50g) granulated sugar (for filling)
  • 1/2 cup (100g) granulated sugar (for topping)
  • 1 cup (225g) unsalted butter, cold and diced
  • 1/2 cup (115g) unsalted butter, cold and diced (for topping)
  • 1/4 cup (30g) cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper, leaving an overhang for easy lifting.
  2. In a mixing bowl, combine 2 cups of flour, 1/2 cup of sugar, and a pinch of salt. Cut in 1 cup of cold butter until the mixture resembles coarse crumbs. Press this into the bottom of the prepared pan and bake for 15 minutes.
  3. While the crust bakes, toss the peeled and sliced peaches with 1/4 cup of cornstarch, 1/4 cup of sugar, 1 tablespoon of lemon juice, and 1/2 teaspoon of cinnamon. Set aside.
  4. Once the crust is out of the oven, spread the peach mixture evenly over it.
  5. In the same bowl used for the crust, combine 1 cup of flour, 1/2 cup of sugar, and 1/2 cup of cold butter to make the topping. Sprinkle it over the peaches.
  6. Return the pan to the oven and bake for 40-45 minutes, or until the topping is golden brown and the peaches are bubbling.
  7. Let the bars cool completely before lifting them out of the pan and slicing into squares.

Notes

For best results, use ripe peaches and ensure the butter is cold. Let the bars cool completely before slicing for clean cuts. These bars can be served warm with ice cream or cold from the fridge.
