These heavenly peach bars are the ultimate summer dessert, featuring buttery layers topped with golden, caramelized peaches. Perfect for picnics, potlucks, or an afternoon treat.

- 4 cups fresh peaches, peeled and sliced (about 5 large peaches)
- 2 cups (250g) all-purpose flour
- 1 cup (226g) unsalted butter, cold and cubed
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) granulated sugar (for filling)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons (30ml) lemon juice
- 1/4 cup (30g) cornstarch
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix 2 cups of all-purpose flour, 3/4 cup granulated sugar, and a pinch of salt. Add 1 cup cold unsalted butter and use a pastry blender or forks to cut it into the dry ingredients until crumbly.
- Take two-thirds of the crumb mixture and press it firmly into the bottom of the prepared pan. Bake for 12-15 minutes until lightly golden.
- Peel and slice 4 cups of fresh peaches. Toss them with 2 tablespoons lemon juice, 1/4 cup cornstarch, 1/2 cup sugar, and 1 teaspoon cinnamon.
- Spread the peach mixture evenly over the baked crust.
- Mix 1 teaspoon vanilla extract into the remaining crumb mixture. Sprinkle it evenly over the peaches.
- Return the pan to the oven and bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbling.
- Let the bars cool completely in the pan before slicing.
Notes
Chill your butter for a flaky crust. Let the bars cool completely before slicing for clean cuts. To easily peel peaches, blanch them in boiling water for 30 seconds, then transfer to ice water.
