Description
A guilt-free, refreshing summer treat combining the creamy tang of Greek yogurt with the sweet-tart burst of ripe cherries. Naturally sweetened and easy to make, it’s perfect for any occasion.
Ingredients
Scale
- 2 cups (300g) fresh cherries, pitted (or thawed frozen cherries)
- 2 cups (500g) full-fat Greek yogurt (or 2% for a lighter option)
- 1/4 cup (60ml) honey (or maple syrup as an alternative)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Wash and pit the cherries (around 2 cups or 300g). If using frozen cherries, thaw them first.
- Add the cherries, 2 cups (500g) of Greek yogurt, 1/4 cup (60ml) honey, 1 tsp vanilla extract, and 1 tbsp lemon juice to a blender or food processor. Blend until smooth and creamy.
- If using an ice cream maker, chill the blended mixture in the refrigerator for 30 minutes. If not, pour it directly into a freezer-safe container.
- For an ice cream maker, follow the manufacturer’s instructions to churn the mixture into frozen yogurt. Without an ice cream maker, spread the mixture evenly in a container and freeze for 4-6 hours, stirring every hour to break up ice crystals.
- Scoop into bowls or cones and enjoy immediately! Garnish with fresh cherries or a drizzle of honey for extra flair.
Notes
For a vegan option, use coconut yogurt and agave syrup instead of Greek yogurt and honey. Stirring the mixture every hour during freezing prevents ice crystals and ensures a smooth texture. Let the frozen yogurt sit at room temperature for 5-10 minutes before scooping if it’s too firm.
