- 1 1/2 cups (190g) all-purpose flour
- 3/4 cup (170g) cold, cubed unsalted butter
- 1/2 cup (100g) granulated sugar
- 3/4 cup (240g) raspberry preserves
- 1/2 cup (40g) rolled oats
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a large bowl, combine flour, sugar, and cold butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Take two-thirds of the crumble mixture and press it firmly into the bottom of the prepared pan to form the crust.
- Spread raspberry preserves evenly over the crust, leaving about a 1/4-inch border around the edges.
- Mix the remaining crumble mixture with rolled oats and sprinkle it evenly over the raspberry layer.
- Bake for 35–40 minutes, or until the top is golden brown and the raspberry filling is bubbling slightly.
- Allow the bars to cool completely in the pan before lifting them out and slicing into squares or rectangles.
Notes
For extra flavor, add a splash of vanilla extract or a pinch of cinnamon to the crumble mixture. Let the bars cool completely before slicing for the best results.
