Description

These raspberry bars combine a buttery crumble, sweet-tart raspberry filling, and golden crispness for an easy, crowd-pleasing dessert perfect for any occasion.

  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 cup (170g) cold, cubed unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 3/4 cup (240g) raspberry preserves
  • 1/2 cup (40g) rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, combine flour, sugar, and cold butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Take two-thirds of the crumble mixture and press it firmly into the bottom of the prepared pan to form the crust.
  4. Spread raspberry preserves evenly over the crust, leaving about a 1/4-inch border around the edges.
  5. Mix the remaining crumble mixture with rolled oats and sprinkle it evenly over the raspberry layer.
  6. Bake for 35–40 minutes, or until the top is golden brown and the raspberry filling is bubbling slightly.
  7. Allow the bars to cool completely in the pan before lifting them out and slicing into squares or rectangles.

Notes

For extra flavor, add a splash of vanilla extract or a pinch of cinnamon to the crumble mixture. Let the bars cool completely before slicing for the best results.
