- 2 1/4 cups (280g) all-purpose flour
- 3/4 cup (170g) unsalted butter, room temperature
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) brown sugar
- 1 large egg
- 1 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup freeze-dried strawberries, crushed into powder
- Optional: Pink food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Crush the freeze-dried strawberries into a fine powder using a food processor or a zip-top bag and rolling pin.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Mix in the egg, lemon juice, and lemon zest. If using food coloring, add a drop or two now.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the freeze-dried strawberry powder.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
Chill the dough for 15-20 minutes if your kitchen is warm to prevent spreading. Keep an eye on the bake time to avoid overcooking.
