This Easy One Pot Creamy Tuscan Gnocchi recipe features tender gnocchi in a luscious garlic cream sauce with sun-dried tomatoes, spinach, and Parmesan cheese. Perfect for busy weeknights or cozy weekends.

- 1 pound (500g) gnocchi
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth (or vegetable broth for vegetarian option)
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat. Add 3 cloves of minced garlic and sauté until fragrant, about 1 minute.
- Stir in 1/3 cup of chopped sun-dried tomatoes and cook for another 2 minutes.
- Pour in 1 cup of chicken broth and stir to loosen any browned bits from the bottom of the pan.
- Stir in 1 pound (500g) of gnocchi and bring to a simmer. Cover and cook for 3-4 minutes, or until the gnocchi starts to soften.
- Reduce the heat to low and stir in 1 cup of heavy cream. Let it simmer gently until the sauce thickens, about 3-5 minutes.
- Add 2 cups of fresh spinach and 1/2 cup of grated Parmesan cheese. Stir until the spinach wilts and the cheese melts into the sauce.
- Sprinkle with 1 teaspoon of Italian seasoning and season with salt and pepper to taste. Serve immediately with extra Parmesan on top, if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half. Add mushrooms, artichokes, or crispy pancetta for extra flavor. Adjust sauce consistency with broth if needed.
