- 1 1/2 cups Arborio rice
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
- 5–6 cups warm chicken or vegetable stock
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- In a small saucepan, heat the chicken or vegetable stock over low heat and keep warm throughout cooking.
- In a large skillet, heat olive oil and butter over medium heat. Add diced onion and garlic, cooking until softened and fragrant (about 3-4 minutes).
- Stir the Arborio rice into the skillet, coating it in the oil and butter. Toast for 1-2 minutes until the edges of the grains look translucent.
- Pour in the white wine and stir until mostly absorbed.
- Using a ladle, add one scoop of warm stock to the rice. Stir continuously until the liquid is absorbed, then repeat until the rice is tender and creamy (about 20-25 minutes).
- In a separate pan, sauté the sliced mushrooms in a bit of butter or olive oil until browned and tender.
- Add the sautéed mushrooms to the risotto during the last few minutes of cooking.
- Stir in the grated Parmesan cheese, taste, and season with salt and pepper. Add a splash of stock if the risotto seems too thick.
- Spoon into bowls and garnish with chopped parsley. Serve immediately.
Notes
Keep the stock warm throughout cooking for best results. Stir constantly and add stock gradually to achieve the perfect creamy texture. Fresh Parmesan makes a significant difference in flavor.
