- 8 ounces (225g) egg noodles, ramen noodles, or soba noodles
- 1/2 cup (120ml) soy sauce
- 1/4 cup (50g) brown sugar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons cooking oil (for chicken)
- 1 tablespoon cooking oil (for vegetables)
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup snap peas
- 1 cup sliced bell peppers
- 1 tablespoon toasted sesame seeds (optional, for garnish)
- 2 scallions, chopped (optional, for garnish)
Instructions
- Bring a large pot of water to a boil, add a pinch of salt, and cook the noodles according to the package instructions. Drain and set aside.
- In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil to prepare the teriyaki sauce. Adjust sweetness to taste.
- Heat 2 tablespoons of oil in a skillet or wok over medium-high heat. Add the chicken pieces and cook for 6–8 minutes, stirring occasionally, until golden brown and cooked through. Remove and set aside.
- In the same skillet, add another tablespoon of oil if needed. Toss in the chopped vegetables and stir-fry for 3–5 minutes until tender-crisp.
- Return the chicken to the skillet, add the cooked noodles, and pour the teriyaki sauce over everything. Toss well to coat evenly.
- Sprinkle sesame seeds and chopped scallions on top before serving.
Notes
For best results, cook the chicken in batches to avoid overcrowding the skillet. Prep all ingredients beforehand as stir-frying happens quickly. Customize the sauce with a splash of rice vinegar for tanginess or chili flakes for heat.
