  • 8 ounces (225g) egg noodles, ramen noodles, or soba noodles
  • 1/2 cup (120ml) soy sauce
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 1 pound (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons cooking oil (for chicken)
  • 1 tablespoon cooking oil (for vegetables)
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 cup sliced bell peppers
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • 2 scallions, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of water to a boil, add a pinch of salt, and cook the noodles according to the package instructions. Drain and set aside.
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil to prepare the teriyaki sauce. Adjust sweetness to taste.
  3. Heat 2 tablespoons of oil in a skillet or wok over medium-high heat. Add the chicken pieces and cook for 6–8 minutes, stirring occasionally, until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add another tablespoon of oil if needed. Toss in the chopped vegetables and stir-fry for 3–5 minutes until tender-crisp.
  5. Return the chicken to the skillet, add the cooked noodles, and pour the teriyaki sauce over everything. Toss well to coat evenly.
  6. Sprinkle sesame seeds and chopped scallions on top before serving.

Notes

For best results, cook the chicken in batches to avoid overcrowding the skillet. Prep all ingredients beforehand as stir-frying happens quickly. Customize the sauce with a splash of rice vinegar for tanginess or chili flakes for heat.
