  • 1 1/2 cups (300g) granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 can (21 ounces, or about 600g) cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease it lightly.
  2. In a large mixing bowl, cream 1 cup of unsalted butter and 1 1/2 cups of granulated sugar until light and fluffy, about 2-3 minutes. Add 3 large eggs and 1 teaspoon of vanilla extract, mixing until combined.
  3. Gradually add 3 cups of all-purpose flour and 1/2 teaspoon of salt into the wet mixture. Mix until a soft dough forms.
  4. Spread about 2/3 of the dough into the prepared baking pan, creating an even layer. Pour 1 can of cherry pie filling over the dough, spreading it evenly.
  5. Drop spoonfuls of the remaining dough over the cherry filling. Don’t worry if there are gaps—the dough will spread as it bakes.
  6. Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbling. Let the bars cool completely before cutting.

For cleaner slices, let the bars cool completely before cutting. Refrigerate the dough for 15 minutes if it feels sticky.
