- 4 cups (about 600g) blueberries
- 1/3 cup (65g) granulated sugar
- 1 tablespoon (15ml) lemon juice
- 1 cup (125g) all-purpose flour
- 1/3 cup (65g) granulated sugar

- Pinch of salt
- 6 tablespoons (85g) cold unsalted butter, cut into small cubes
- 1/2 cup (120ml) milk
- 1 teaspoon (5ml) vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish lightly with butter or cooking spray.
- In a mixing bowl, combine blueberries, granulated sugar, and lemon juice. Mix well and pour into the prepared baking dish.
- In another bowl, whisk together flour, granulated sugar, baking powder, and a pinch of salt.
- Add cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
- Pour in milk and vanilla extract. Stir until just combined.
- Drop spoonfuls of the topping evenly over the blueberry filling. The topping should look rustic and not perfectly even.
- Bake for 35-40 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
- Let the cobbler cool for 10-15 minutes before serving. The filling will thicken as it cools.
Notes
For best results, use cold butter and avoid overmixing the topping. If the topping browns too quickly, tent the dish with aluminum foil during the last 10 minutes of baking. Serve warm with vanilla ice cream or whipped cream.
