  • 2 cups (300 g) pitted fresh or frozen cherries
  • 1 tablespoon granulated sugar (for roasting cherries)
  • 1 cup (175 g) dark chocolate (60-70% cocoa content)
  • 1/2 cup (115 g) unsalted butter, room temperature
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (95 g) all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and a square baking pan with parchment as well.
  2. Toss 2 cups (300 g) of pitted cherries with 1 tablespoon of sugar. Spread them on the baking sheet in a single layer and roast for 15-20 minutes, or until they’re soft and slightly caramelized. Set aside to cool.
  3. Melt 1 cup (175 g) of dark chocolate and 1/2 cup (115 g) of unsalted butter together in a microwave-safe bowl or over a double boiler. Stir until smooth.
  4. In a large bowl, whisk together 2 large eggs, 1 cup (200 g) of granulated sugar, and 1 teaspoon of vanilla extract until light and fluffy.
  5. Stir the melted chocolate mixture into the egg mixture until combined. Then, fold in 3/4 cup (95 g) of all-purpose flour and a pinch of salt. Mix just until no streaks of flour remain.
  6. Gently fold in the roasted cherries, being careful not to overmix.
  7. Pour the batter into the prepared baking pan and spread it evenly. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let the brownies cool completely in the pan before slicing. Serve as is, or dust with powdered sugar for a fancy touch.

Notes

For the cleanest cuts, use a sharp knife and wipe it clean between slices. Avoid overbaking to keep the brownies fudgy. Roasting cherries properly is key to enhancing their flavor.
