- 2 cups (300 g) pitted fresh or frozen cherries
- 1 tablespoon granulated sugar (for roasting cherries)
- 1 cup (175 g) dark chocolate (60-70% cocoa content)
- 1/2 cup (115 g) unsalted butter, room temperature
- 1 cup (200 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup (95 g) all-purpose flour
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and a square baking pan with parchment as well.
- Toss 2 cups (300 g) of pitted cherries with 1 tablespoon of sugar. Spread them on the baking sheet in a single layer and roast for 15-20 minutes, or until they’re soft and slightly caramelized. Set aside to cool.
- Melt 1 cup (175 g) of dark chocolate and 1/2 cup (115 g) of unsalted butter together in a microwave-safe bowl or over a double boiler. Stir until smooth.
- In a large bowl, whisk together 2 large eggs, 1 cup (200 g) of granulated sugar, and 1 teaspoon of vanilla extract until light and fluffy.
- Stir the melted chocolate mixture into the egg mixture until combined. Then, fold in 3/4 cup (95 g) of all-purpose flour and a pinch of salt. Mix just until no streaks of flour remain.
- Gently fold in the roasted cherries, being careful not to overmix.
- Pour the batter into the prepared baking pan and spread it evenly. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan before slicing. Serve as is, or dust with powdered sugar for a fancy touch.
Notes
For the cleanest cuts, use a sharp knife and wipe it clean between slices. Avoid overbaking to keep the brownies fudgy. Roasting cherries properly is key to enhancing their flavor.
