- ½ cup (50g) unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- Pinch of salt
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) vegetable oil
- 1 large egg
- ¾ cup (180ml) buttermilk
- 1 tsp vanilla extract
- 8 oz (226g) cream cheese
- 1 cup (120g) powdered sugar
- 1 tsp vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, combine sugar, vegetable oil, egg, buttermilk, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing.
- Using a cookie scoop or tablespoon, drop small mounds of batter onto the prepared baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the tops spring back when lightly pressed. Let the cakes cool completely on a wire rack.
- For the filling, beat cream cheese, powdered sugar, and vanilla extract until creamy and smooth.
- Spread or pipe the filling onto the flat side of half the cakes, then sandwich with the remaining cakes. Press gently to secure.
Notes
For a richer chocolate flavor, add a pinch of instant coffee powder to the batter. Ensure cakes are completely cool before adding the filling to prevent melting.
