  • 1 cup (226g) unsalted butter
  • 8 ounces (225g) dark chocolate (at least 70% cocoa content)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 3 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon (3g) salt
  • 1 cup (100g) chopped fresh rhubarb

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a microwave-safe bowl, combine the butter and dark chocolate. Microwave in 30-second intervals, stirring between each, until smooth and melted. Let it cool slightly.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, and eggs. Add the vanilla extract and the melted chocolate mixture. Stir until combined.
  4. Sift in the all-purpose flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet mixture until no streaks remain.
  5. Fold in the chopped rhubarb, reserving a few pieces to sprinkle on top.
  6. Pour the batter into the prepared pan and spread it evenly. Sprinkle the reserved rhubarb pieces on top.
  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let the brownies cool completely in the pan before lifting them out using the parchment paper overhang. Slice into squares and enjoy.

Notes

For cleaner slices, chill the brownies in the fridge for 30 minutes before cutting. If using frozen rhubarb, thaw and drain it thoroughly before adding to the batter.
