- 2 medium zucchinis
- 1 cup (120g) panko breadcrumbs
- 1/2 cup (50g) grated Parmesan cheese
- 2 eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Pinch of salt
- Olive oil spray
Instructions
- Preheat the oven to 425°F (220°C). If using an air fryer, preheat it to 400°F (200°C).
- Wash and dry the zucchinis. Slice them into sticks about 3 inches long and 1/2 inch thick. Pat dry with paper towels to remove excess moisture.
- In one bowl, beat 2 eggs. In another bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, and a pinch of salt.
- Dip each zucchini stick into the egg mixture, then roll it in the breadcrumb mixture, pressing lightly to ensure an even coating.
- Place the coated zucchini sticks on a wire rack set over a baking sheet or directly on a parchment-lined baking sheet. Spray lightly with olive oil.
- Bake for 20-25 minutes, flipping halfway through, or air fry for 12-15 minutes, until golden and crispy.
- Remove the fries from the oven or air fryer and let them cool slightly before serving. Pair with your favorite dipping sauce.
Notes
Pat the zucchini dry to remove excess moisture for crispier fries. Use fresh Parmesan for better flavor and texture. Flip the fries halfway through baking for even cooking.
