- 2 medium zucchini
- 1/2 cup (60g) all-purpose flour
- 2 large eggs
- 1 cup (120g) panko breadcrumbs
- 1/4 cup (30g) grated Parmesan
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C) or the air fryer to 400°F (200°C).
- Wash and dry the zucchini, then slice into sticks about 3-4 inches long and 1/2 inch thick.
- In one bowl, mix flour with a pinch of salt. In a second bowl, beat the eggs. In a third bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, paprika, and Italian seasoning.
- Dip each zucchini stick into the flour, then the egg, and finally coat with the breadcrumb mixture. Press gently to ensure the coating sticks.
- Place the breaded zucchini sticks on a parchment-lined baking sheet or a wire rack, ensuring they are spaced apart.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. If air frying, cook for 12-15 minutes, shaking the basket halfway.
- Let the fries cool slightly before serving. Pair with your favorite dipping sauce.
Notes
For extra crispiness, use a wire rack to elevate the fries while baking. Pat the zucchini dry before breading to prevent sogginess. Chill breaded zucchini in the fridge for 15 minutes before baking for better coating adherence.
