- 2 large eggs
- 1 cup (100g) panko breadcrumbs

- Pinch of black pepper
Instructions
- Preheat your oven to 425°F (220°C) or set your air fryer to 400°F (200°C).
- Slice zucchini into matchsticks about 3 inches long and 1/2 inch thick. Pat them dry with a paper towel to remove excess moisture.
- Set up three shallow bowls: one with flour, one with whisked eggs, and one with a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, paprika, and black pepper.
- Dip each zucchini piece into the flour, then the egg, and finally coat it in the breadcrumb mixture. Press lightly to ensure the coating sticks.
- Place the coated zucchini on a wire rack set over a baking sheet, ensuring they are spaced apart for even cooking.
- Bake for 20-25 minutes, turning halfway through, or air fry in batches for 12-15 minutes, shaking the basket halfway.
- Let the fries cool for 5 minutes before serving. Serve hot with your favorite dipping sauce.
Notes
For extra crispiness, double-coat the zucchini by repeating the egg and breadcrumb step. If reheating leftovers, use an oven or air fryer to maintain the crunch.
