Description
This creamy cottage cheese ice cream is a velvety, luxurious dessert that’s easy to make and packed with protein. It’s a refreshing and customizable treat perfect for any season.
Ingredients
Scale
- 2 cups (450 grams) full-fat cottage cheese
- 1/4 cup (60 ml) honey
- 1 teaspoon vanilla extract
- 1 cup (150 grams) frozen fruits (e.g., strawberries, mangoes, or blueberries)
- 1/4 cup (60 ml) heavy cream (optional)
- Pinch of salt
Instructions
- In a blender or food processor, combine 2 cups (450 grams) of cottage cheese, 1/4 cup (60 ml) of honey, and 1 teaspoon of vanilla extract. Blend until completely smooth, about 1-2 minutes.
- Add 1 cup (150 grams) of frozen fruits of your choice and blend again until the mixture is creamy and the fruits are fully incorporated.
- Taste the mixture and add more honey if needed. Remember, flavors mellow as the ice cream freezes, so slightly sweeter is better.
- For extra richness, add 1/4 cup (60 ml) of heavy cream and blend briefly (optional).
- Transfer the mixture to a freezer-safe container. Smooth out the top with a spatula and cover tightly. Freeze for at least 4 hours or overnight.
- Let the ice cream sit at room temperature for 5-10 minutes before scooping to soften slightly. Serve in bowls or cones and enjoy!
Notes
For the best texture, use full-fat cottage cheese and frozen fruits. Let the ice cream sit at room temperature for a few minutes before scooping. Experiment with mix-ins like chocolate chips, nuts, or a swirl of peanut butter for added flavor.
