  • 1/2 cup (75g) dried cranberries
  • 1/2 cup (85g) white chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter and use a pastry cutter or forks to work it into the flour until pea-sized crumbs form.
  4. Stir in dried cranberries and white chocolate chips.
  5. In a small bowl, mix heavy cream and vanilla extract. Pour it into the dry mix and gently stir until the dough comes together.
  6. Turn the dough onto a floured surface and pat into a circle about 1 inch (2.5cm) thick.
  7. Use a sharp knife to slice into 8 triangles. Place them on the prepared baking sheet.
  8. Bake for 15-18 minutes or until golden brown. Let cool slightly before serving.
