Ingredients

  • 1 cup (240g) cottage cheese
  • 1 cup (150g) fresh or frozen blueberries
  • 2 cups (200g) almond flour
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/3 cup (70g) sweetener (erythritol or stevia)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it well.
  2. In a bowl, whisk together almond flour, baking powder, and a pinch of salt.
  3. In a separate bowl, whisk eggs until frothy. Add cottage cheese, sweetener, and vanilla extract. Mix until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Check after 40 minutes to avoid overbaking.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack.

Notes

For best results, use room-temperature ingredients and avoid overmixing the batter. If the top browns too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
