A high-protein, low-carb bread that’s moist, slightly tangy, and packed with juicy blueberries. Perfect for breakfast or a healthy snack.

- 1 cup (240g) cottage cheese
- 1 cup (150g) fresh or frozen blueberries
- 2 cups (200g) almond flour
- 3 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/3 cup (70g) sweetener (erythritol or stevia)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it well.
- In a bowl, whisk together almond flour, baking powder, and a pinch of salt.
- In a separate bowl, whisk eggs until frothy. Add cottage cheese, sweetener, and vanilla extract. Mix until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Gently fold in the blueberries, being careful not to crush them.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Check after 40 minutes to avoid overbaking.
- Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack.
Notes
For best results, use room-temperature ingredients and avoid overmixing the batter. If the top browns too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
