  • 2 1/2 cups (310g) all-purpose flour
  • 1 3/4 cups (350g) granulated sugar
  • 1 cup (226g) unsalted butter, at room temperature
  • 5 egg whites
  • 1 cup (240ml) coconut milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup sweetened shredded coconut
  • 4 cups (480g) powdered sugar
  • 8 oz (225g) cream cheese
  • 1/2 cup (115g) unsalted butter, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and baking soda.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Mix in the coconut milk and vanilla extract. Gradually incorporate the dry ingredients.
  5. In a separate bowl, whip the egg whites until soft peaks form. Gently fold them into the batter.
  6. Divide the batter evenly between the pans. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
  8. To make the frosting, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
  9. Spread frosting between the cake layers, then frost the top and sides. Sprinkle shredded coconut all over.

Notes

For best results, use room temperature ingredients. Toast shredded coconut for topping to add a crunchy texture. If the frosting is too soft, chill it in the fridge for 10-15 minutes before assembling.
