- 1 ½ cups (355 ml) warm water
- 2 ¼ tsp (7 g) active dry yeast
- 1 tbsp (12 g) sugar
- 4 cups (480 g) all-purpose flour
- 1 tsp (6 g) salt
- 8 cups (2 liters) water
- 2 tbsp (28 g) baking soda
- ¼ cup (50 g) granulated sugar
- 1 tbsp (6 g) cinnamon
- Unsalted butter (for brushing)
Instructions
- In a large bowl, combine warm water, active dry yeast, and sugar. Let sit for 5 minutes until foamy.
- Add all-purpose flour and salt, then mix until a dough forms. Knead for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot for about 1 hour or until doubled in size.
- Preheat the oven to 425°F (220°C). Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into pretzel twists.
- In a large pot, bring water and baking soda to a boil. Carefully lower each pretzel into the boiling water for 30 seconds, then transfer to a baking sheet using a slotted spoon.
- Brush the pretzels with melted butter and bake for 12-15 minutes, or until golden brown.
- Mix granulated sugar with cinnamon. Brush baked pretzels with melted butter again and generously sprinkle or dip in the cinnamon sugar mixture.
Notes
Don’t skip the boiling step—it’s essential for the chewy texture. For a deeper flavor, swap granulated sugar for brown sugar in the cinnamon-sugar mixture.
