  • 4 cups (480 g) all-purpose flour
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 1/2 cups (355 ml) warm water (110°F or 43°C)
  • 1 tablespoon (12 g) sugar
  • 1 teaspoon (5 g) salt
  • 1/2 cup (120 g) baking soda
  • 8 cups (1.9 liters) water
  • 4 tablespoons (56 g) melted butter
  • 3 parts granulated sugar
  • 1 part ground cinnamon

Instructions

  1. In a mixing bowl, combine 1 1/2 cups of warm water with 2 1/4 teaspoons of active dry yeast and 1 tablespoon of sugar. Let it sit for 5 minutes until foamy.
  2. Add 4 cups of all-purpose flour and 1 teaspoon of salt to the yeast mixture. Stir until combined, then knead for 8-10 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise for 1 hour or until doubled in size.
  4. Preheat your oven to 425°F (220°C). Line baking sheets with parchment paper.
  5. Divide the dough into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
  6. Boil 8 cups of water with 1/2 cup of baking soda. Drop each pretzel into the boiling water for about 20 seconds, then place on the baking sheet.
  7. Bake the pretzels for 12-15 minutes until golden brown.
  8. Brush the hot pretzels with melted butter and generously sprinkle with cinnamon sugar.

Notes

Ensure the water for activating the yeast is warm but not too hot. Be generous with the butter and cinnamon sugar for the best flavor. If the dough feels sticky, add a tablespoon of flour at a time until manageable.
