Description

This Churro Stuffed French Toast recipe combines the decadent flavors of churros with the comforting richness of French toast. Perfect for brunch or a cozy breakfast, it’s stuffed with creamy filling and coated in cinnamon sugar for an irresistible treat.

Ingredients

Scale
  • Thick slices of brioche or challah (or Texas toast as an alternative)
  • 3 large eggs
  • 1 cup (240 ml) whole milk (or heavy cream, almond milk, or oat milk)
  • 8 oz (225 g) softened cream cheese (or mascarpone)
  • 3 tbsp (45 g) powdered sugar
  • 1 tsp (5 ml) vanilla extract
  • 1/2 cup (100 g) granulated sugar
  • 2 tsp (10 g) ground cinnamon
  • 2 tbsp (30 g) unsalted butter (or neutral oil)
  • Pinch of salt

Instructions

  1. Prepare the filling: In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Make the custard: In a shallow dish, whisk together eggs, milk, vanilla extract, and a pinch of salt.
  3. Stuff the bread: Spread a generous layer of the cream cheese mixture onto one slice of bread, then top with another slice to create a sandwich.
  4. Dip the sandwich: Submerge the stuffed bread in the custard mixture, letting it soak for about 20 seconds per side.
  5. Cook the French toast: Heat a non-stick skillet over medium heat and melt butter. Cook the stuffed French toast for 3-4 minutes per side or until golden brown.
  6. Coat with cinnamon sugar: Combine granulated sugar and ground cinnamon in a shallow bowl. Roll the cooked French toast in the cinnamon sugar mixture while it’s still warm.
  7. Serve: Slice the French toast diagonally and serve immediately with a drizzle of maple syrup or a dollop of whipped cream.

Notes

Don’t overstuff the bread to avoid tearing. Use medium heat to prevent burning the butter or sugar coating. Keep cooked French toast warm in a low oven while finishing the rest.
