- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (220g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups (310g) all-purpose flour
- ¾ cup (70g) cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (150g) semi-sweet chocolate chips
- 1 cup (50g) mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together 1 cup (230g) of softened butter, 1 cup (200g) of granulated sugar, and 1 cup (220g) of brown sugar until light and fluffy.
- Add 2 large eggs and 1 teaspoon of vanilla extract. Mix until well combined.
- In a separate bowl, whisk together 2 ½ cups (310g) of all-purpose flour, ¾ cup (70g) of cocoa powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in 1 cup (150g) of semi-sweet chocolate chips and 1 cup (50g) of mini marshmallows.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Use fresh marshmallows for the best texture, and avoid overmixing the dough to keep the cookies tender.
