  • Ripe but firm pears (e.g., Bosc or Anjou)
  • 1/4 cup (50g) granulated sugar for caramelizing
  • 1/2 cup (100g) powdered sugar for almond filling
  • 2 tablespoons (30g) unsalted butter for caramelizing
  • 1/2 cup (120g) unsalted butter for almond filling
  • 1 cup (100g) almond flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • Tart dough or store-bought pie crust

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan lightly with butter or non-stick spray.
  2. Roll out the tart dough and press it gently into the tart pan. Trim the excess and prick the bottom with a fork. Chill in the fridge for 15 minutes.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Add 1/4 cup of sugar and stir until dissolved. Place pear slices in the skillet and cook for 3-4 minutes on each side until golden and caramelized. Set aside to cool.
  4. In a bowl, cream together 1/2 cup of butter and 1/2 cup of powdered sugar. Add eggs one at a time, mixing well after each. Stir in almond flour, vanilla extract, and a pinch of salt.
  5. Spread the almond filling evenly over the chilled tart crust. Arrange the caramelized pear slices on top in a decorative pattern.
  6. Bake the tart for 35-40 minutes, or until the filling is set and lightly golden. Let cool before serving.

Notes

Use firm but ripe pears to avoid them turning mushy during caramelization. Chill the tart crust before baking to prevent shrinking. For a glossy finish, brush the pears with warmed apricot jam after baking.
