  • 1/2 cup (100g) brown sugar
  • 1 cup (226g) cold, cubed butter
  • 16 ounces (450g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 medium Granny Smith apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (113g) cold butter
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, combine 2 cups of all-purpose flour, 1/2 cup brown sugar, and 1 cup cold, cubed butter. Mix until crumbly, then press into the bottom of the pan. Bake for 15 minutes, then let it cool.
  3. Beat 16 ounces of softened cream cheese with 1/2 cup granulated sugar until smooth. Add 2 large eggs and 1 teaspoon vanilla extract, mixing until combined. Pour over the cooled crust.
  4. Peel and dice 3 medium Granny Smith apples. Toss with 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. Spread evenly over the cheesecake layer.
  5. Combine 1 cup of flour, 1/2 cup brown sugar, and 1/2 cup cold butter. Mix until crumbly, then sprinkle over the apples.
  6. Bake for 40-45 minutes, or until the cheesecake layer is set and the topping is golden brown. Let it cool completely, then refrigerate for at least 2 hours.
  7. Before serving, drizzle generously with caramel sauce. Slice into bars and enjoy!

Notes

Use cold butter for the crust and streusel topping to achieve a crumbly texture. Let the bars cool completely before cutting for clean slices. Warm caramel sauce slightly if it’s too thick for drizzling.
