  • Author: Sarah
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Crispy, spicy, and loaded with flavor, these Buffalo Chicken Bites are the ultimate crowd-pleaser. Perfect for parties, game nights, or casual gatherings, they’re easy to make and endlessly customizable.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast
  • 1/2 cup Buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 2 large eggs
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Neutral cooking oil (e.g., canola, vegetable, or avocado oil) for frying
  • Ranch or blue cheese dressing for dipping

Instructions

  1. Cut the chicken breasts into bite-sized pieces, about 1 inch each. Pat them dry with a paper towel.
  2. In one bowl, mix the flour with garlic powder, onion powder, paprika, salt, and pepper. In another bowl, whisk the eggs. In a third bowl, place the breadcrumbs.
  3. Dip each piece of chicken into the flour mixture, then the egg wash, and finally the breadcrumbs. Press gently to ensure the coating adheres.
  4. If frying, heat about 2 inches of oil in a pan to 350°F (175°C). If baking, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. For frying, cook the chicken in batches for 3-4 minutes per side, or until golden brown and cooked through. For baking, arrange the bites on the prepared sheet and bake for 20-25 minutes, flipping halfway.
  6. In a large bowl, toss the cooked chicken bites in warmed Buffalo sauce until well coated.
  7. Serve immediately with your favorite dipping sauce and celery sticks.

Notes

For extra crunch, double-coat the chicken by dipping it in the egg and breadcrumb mixture twice. Adjust the heat level of the Buffalo sauce by mixing it with melted butter. Use a thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
