  • 2 cups (475ml) buttermilk
  • 2 large eggs
  • 1/4 cup (60g) melted butter
  • 1 teaspoon vanilla extract
  • 1 to 1 1/2 cups fresh or frozen blueberries
  • Maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients, gently whisking until just combined. Do not overmix.
  5. Using a spatula, gently fold in the blueberries.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
