  • 2/3 cup (130g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • Pinch of salt
  • 1/3 cup (80g) raspberry jam
  • 1/2 cup (75g) fresh or frozen raspberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8-inch baking pan with parchment paper, letting the edges hang over for easy removal.
  2. In a mixing bowl, melt 1/2 cup (115g) of unsalted butter. Stir in 2/3 cup (130g) of granulated sugar until smooth.
  3. Add 2 large eggs and 1 teaspoon of vanilla extract to the butter mixture. Whisk until the mixture is glossy and slightly thickened.
  4. In a separate bowl, sift together 1/3 cup (40g) of unsweetened cocoa powder, 1/2 cup (65g) of all-purpose flour, and a pinch of salt. Gradually fold this dry mix into the wet ingredients using a spatula.
  5. Pour the brownie batter into the prepared pan and spread evenly.
  6. In a small bowl, mix 1/3 cup (80g) of raspberry jam with 1/2 cup (75g) of fresh or frozen raspberries. Drop spoonfuls of the raspberry mixture over the brownie batter.
  7. Using a toothpick or skewer, swirl the raspberry mixture into the brownie batter to create beautiful patterns.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking for maximum fudginess!
