  • 3/4 cup (150g) brown sugar
  • 1/2 cup (120ml) vegetable oil

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp salt
  • 1/4 cup (30g) flour (for streusel)
  • 1/4 cup (50g) brown sugar (for streusel)
  • 1/2 tsp cinnamon (for streusel)
  • 2 tbsp (28g) cold butter (for streusel)
  • 1/2 cup (60g) powdered sugar (for glaze)
  • 2 tbsp (30ml) maple syrup (for glaze)
  • 12 tsp milk (for glaze)
  • 1/4 tsp vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, mix the pumpkin puree, brown sugar, vegetable oil, and eggs until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  5. In a small bowl, combine the flour, brown sugar, cinnamon, and cold butter for the streusel. Use a pastry cutter or fork to create a crumbly mixture.
  6. Pour the batter into the loaf pan and sprinkle the streusel evenly on top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, maple syrup, milk, and vanilla extract for the glaze.
  10. Once the bread is completely cool, drizzle the glaze over the top and let it set for 10 minutes before slicing.

Notes

For best results, use room temperature eggs and avoid overmixing the batter. Cool the bread completely before glazing to prevent the glaze from running.
