- 1 cup (200 g) brown sugar
- 1/2 cup (100 g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 3/4 cups (345 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (170 g) butterscotch chips
- 1 cup (170 g) semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
- Fold in the butterscotch chips and chocolate chips.
- Scoop the dough onto the prepared baking sheets (about 2 tablespoons per cookie). Chill the dough in the fridge for 20-30 minutes.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
Notes
Chill the dough for better texture and less spreading. If cookies spread too much, chill longer or add 1-2 tablespoons of flour. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
