Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: Crush graham crackers into fine crumbs. Mix with melted butter and sugar. Press the mixture into a 9-inch pie pan to form an even layer. Bake for 8-10 minutes. Let it cool completely.
- Blend the filling: In a food processor, blend avocados, key lime juice, key lime zest, sweetened condensed milk, and egg yolks until smooth and creamy.
- Bake the pie: Pour the filling into the cooled crust and bake at 325°F (160°C) for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Cool and chill: Allow the pie to cool at room temperature, then refrigerate for at least 4 hours or overnight for the best texture.
- Garnish: Top with whipped cream, lime slices, or additional lime zest before serving.
